She's fairly stable around 70+ fps in most of the games she plays but all dependent on the graphic settings and game. 5600/3060 is a solid bang for the buck setup at this point with a bit of room to upgrade

For 120hz+ u will need to go lower settings anyway with 4060. 12Gb is also better for some types of creative work and software like AI tools, game engines etc. It depends, but do note games having issues with 8Gb gpus is only the start, it will get worse soon.
